Wine
Noon Winery Tawny is a blend of numerous older vintages which have been matured in barrel in partial contact with the air for many years.
Fermentation takes place in small open vats, regularly hand plunged to extract colour and tannins. Two thirds of the way through fermentation, the naturally sweet juice is pressed and fortified with a brandy spirit.
The wine then matures in small oak barrels. At release, the blend has an average age of 15 years. Due to limited ageing barrel stocks, it is not released every year.
Red brown, Noon Winery Tawny has a refined fruit cake bouquet. It is intense with balanced sweetness and a long finish.
Ready to drink on release. Lovely served cold as an aperitif.
